Can it be done? Pong type game on 8x30 display?

I have a pair of 4x20 displays that works fine as a 4x40 display except I had the modules arraigned as 8x20 instead of the usual 4x40. No one makes the display in that manner anyway. Getting it to display correctly was a bit tricky at first since first 20 character of each lines are top half and second 20 are bottom half. Obviously no scrolling at all.

But anyway I was thinking since I have the old game port that is unused. I was wondering if there could be a plugin type that can read the game port for analog value from 2 paddles (like Atari paddles?) and display a Pong style game on the 8x20 screen. Equivalent resolution is 100 x 56 with wide gap in between the 2 displays.

Is that possible?
